Blue Knob Best

We've been trying out burger recipes while camping, this one passed the open campfire test - gas grill should be a no - brainer!


1.5 lbs 80% hamburger
2 eggs
1 onion, diced
1 green pepper, diced
2 x 3oz cans chiles (smoke fired), chopped
2 T. soy sauce
1/4 C. Italian seasoned bread crumbs
1C. Spicy Thai Kettle Chips
1C. Snyders Buffalo Wing pretzels
1 x 6ox. pkg baby Portabella Mushrooms
2 T. Kolavita olive oil
2 T. Butter
1/8 C. Sutter Home Chardonnay
Fresh ground black pepper
Kaiser rolls


In a large bowl, combine 1.5 lbs 80% hamburger by hand with: 2 eggs, lightly beaten 1 mild onion (Bermuda or Vidalia), diced 1 green bell pepper, diced 2 x 3 oz. cans smoke fired chiles, drained 2 tbsp. soy sauce 1/4 c. Italian seasoned bread crumbs In a blender or food processor, crush 1 cup each Spicy Thai Kettle Chips and Snyder's Buffalo Wing pretzels. Form 6 hamburger patties. Coat each hamburger in the chips/pretzel mixture. Topping: Saute 1 6 oz. package of baby portabella mushrooms in 2 tbsp. Kolavita olive oil, 2 tbsp butter, 1/2 black pepper and 1/8 c. Sutter Home Chardonnay. Heat gas grill to medium high. Cook burgers to an internal temp of 145 degrees (meduium rare). Turn only once. Tope with mushroom mixture; serve on Kaiser rolls.
