Blue Cheese Relleno Burger with Red Onion Relish

In New Mexico the only way to have a burger is with green chile and cheese. Since Hatch green chiles aren't readily available elsewhere, I made a few adjustments to this burger. But while the peppers are roasting on the grill it will give you the feeling you're waiting for your sack of chiles to be roasted at the chile stand on the side of the road in New Mexico during Chile season.

Ingredients 

Olive oil for grill
One can Chipotle Peppers (6oz.) in Adobo Sauce, pureed.
Patties:
2 lb. ground chuck
1 t. salt
2 T. Chipotle Pepper puree
Rellenos:
6 lg. Pablano Peppers
6 oz. Blue Cheese
Alluminum Foil Red Onion Relish:
1 lg. red onion, chopped
2 sm. cloves garlic, minced
2 T. Red wine
2 T. Olive Oil
1 t. honey
1/4 t. salt
Chipotle Ketchup:
1/2 c. ketchup
2 T. Chipotle puree
6 lg. Whole Wheat Kaiser Rolls
Olive Oil for brushing
Red Leaf Lettuce (6 leaves)

Instructions 

First, puree one can of chipotle peppers in adobo sauce in a food processor. Patties: Mix ground chuck with salt and 2 T. of chipotle puree, divide into 6 equal portions and form patties. Brush grill with olive oil and preheat gas grill to High. Make Red Onion Relish: Mix onion, garlic, wine, olive oil, honey and salt in a bowl. Place it in a lg. piece of heavy duty alluminum foil folded to make a packet for grilling. Place it on the top rack of the grill. Place the Pablano Peppers on grill turning every 2-3 min. until blackened. Remove and place in heatproof, airtight container to steam. Reduce heat on Grill to Med. High. Place patties on grill. Cook 4 min. turning once and cooking 3 more minutes for Med. Rare. Meanwhile, when peppers have cooled, peel, remove stems and seeds and put a heaping T. blue cheese (about 1oz.) inside each pepper. Make chipotle ketchup by mixing 1/2 c. ketchup with 2T. chipotle puree. When burgers are flipped place the rellenoes on the top rack of grill. Brush Rolls with Olive Oil and place face down on grill when burgers are removed. Grill 1-2 min. until toasted. Remove everything from grill. Being careful of rellenoes, not to let the cheese leak out. Open foil packet with red onion relish. Assembly: Spread bottom bun with Chipotle Ketchup, place a leaf of lettuce, then about 2 T. Red Onion Relish, place the patty and top with relleno, spread top bun with chipotle ketchup and place on top. Enjoy!
