Blue Cheese Bacon Burgers with Blueberry Fire Sauce

Blue Cheese Burgers with Blueberry Fire Sauce combines the sweetness of blueberries, the fire of both serrano and chipotle peppers and the sharpness of blue cheese for a truly unique culinary experience you will not soon forget. Enjoy this burger with a glass of Sutter Home Zinfandel. The spice and pepper in the zin is the perfect compliment to this burger.

Ingredients 

Blueberry Chipotle Sauce:
3 cups fresh blueberries
1/3 cup white wine vinegar
1/3 cup Sutter Home Cabernet Sauvignon
1/3 cup sugar
1/3 cup honey
3 tablespoons chopped canned chipotle chiles in adobo sauce (about 3 chiles)
¼ cup orange juice
Pinch of salt
Patties:
8 slices bacon, cooked crisp and crumbled
2 pounds ground chuck
2 serrano peppers finely chopped (remove seeds and inner membrane)
1 cup crumbled blue cheese
½ teaspoon kosher rock salt
½ teaspoon fresh ground pepper
Vegetable oil, for brushing on the grill rack
6 (4 1/2-inch) soft Kaiser rolls, split Grey Poupon Dijon Mustard for buns

Instructions 

To make the Blueberry Chipotle Sauce, combine all sauce ingredients in a large saucepan. Bring to a boil over Medium High heat. Reduce heat, and simmer, uncovered, 25 minutes or until thick, stirring frequently. Cool. When sauce is cool pour into airtight container and set aside. Note: Blueberry Chipotle Sauce can be made in advance and stored in airtight containers in refrigerator up to 6 weeks. Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the patties, combine all patty ingredients in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the rolls. When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once if possible, until done to preference, 5 to 7 minutes on each side for medium. When the patties are cooked, remove from the grill, and put on plate tented lightly with foil to keep warm. Place the rolls, cut side down, on the outer edges of the grill rack to toast lightly. To assemble the burgers, spread a generous amount of Grey Poupon Mustard over the top sides of the rolls. On each roll bottom place a patty then top with desired amount of Blueberry Chipotle Sauce. Add the roll tops and serve. Makes 6 burgers

Comments 

Blueberry Chipotle Sauce can be made less spicy by adding less chipotle pepper. Gloves are recommended when handling serrano peppers.
