Blue Bacon Burger

This recipe came about after my husband and I prepared a pinwheel steak stuffed with roasted red peppers and spinach served with the blue cheese sauce. We thought it was delicious and decided to simplify it into an awesome burger.

2 lbs. ground beef
salt, to taste
1/4 t. black pepper, plus to taste
12 strips pre-cooked bacon
3 oz. cream cheese, softened
1/4 C. milk
1 T. butter
1/2 c. crumbled blue cheese
6 italian hamburger buns
olive oil
1 jar roasted red peppers(7 oz), drained
2 C. fresh spinach leaves, washed

Pre-heat gas grill to medium heat. Divide and form beef into six equal patties. Sprinkle patties with salt and pepper to your liking. Place patties on grill over medium heat for 5-7 minutes per side or until cooked through. Place bacon on top warming rack of grill or over low heat for approximately 5 minutes or to desired crispness. Meanwhile, prepare blue cheese sauce in small saucepan over grates of grill by combining cream cheese, milk, butter, pepper and blue cheese until melted smooth. Spread both halves of bun with olive oil and put on grill for about one minute until golden brown. To dress burgers place patty on bottom half of bun. Top with 2 slices of bacon, roasted red peppers and spinach leaves. Spread top half of bun generously with blue cheese sauce. Place on top of spincach. Enjoy!!!

The blue cheese sauce may be prepared in advance. It refrigerates well. Pre-cooked bacon can be warmed on grill warming racks. This recipe is soooo simple. My friends and family can't believe how fast I can put together such a gourmet tasting burger. Pairs great with a glass of wine, also!
