Blu Truffle Sirloin Burger

I'm a farmer/shepherd and I want fresh food with extremely bold! When I come in from training horses or working with my sheep, I want my hamburgers to scream *flavor* but in a minimum amount of time. I usually work from dawn to dusk and there's not a lot of spare time for mixing up a lot of ingredients. This Blu Truffle Burger has extreme flavor in a minimum amount of time as well a minimum amount of ingredients.


3 pounds freshly ground sirloin
1/2 cup Sutter Home Merlot
3/4 cup Roquefort cheese crumbles
1/2 cup plain flat bread, ground into fine crumbs
1/4 cup truffle mayonnaise
1 truffle, shaved
1 tsp freshly ground white pepper
1/2 tsp freshly ground sea salt
4 whole wheat hamburger buns
olive oil for grill
Truffle Mayonnaise:
1/2 cup white truffle oil
1/2 cup hazelnut oil
1/4 cup Roquefort cheese
1 egg yolk
2 tsp shaved truffle
2 tsp red wine vinegar


Mix all ingredients and let rest for 30 minutes then mold into six patties. Heat grill, spray with olive oil and grill burgers until internal temp is at least 160 degrees F. Serve Blu Truffle Sirloin Burgers with Truffle Mayonnaise spread on both sides of buns.
