Blazing Hot Buffalo Style Blue Cheese Burgers

This is a burger twist on traditional chicken wings. Serve with plenty of napkins!

Ingredients 

Blue Cheese Spread:
1/2 cup crumbled blue cheese, preferably Maytag blue.
1/2 cup of mayonnaise
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 tablespoon buttermilk
Patties:
3 pounds ground chuck
2 tablespoons grill seasoning
2 tablespoons Worcestershire sauce
2 tablespoons plus one 6 ounce bottle of hot sauce
1 egg, beaten
2 cloves fresh garlic, minced
3 teaspoons salt
3 teaspoons fresh ground black pepper
1/8 teaspoon crushed red pepper flakes
1 small white onion, minced
Vegetable oil for brushing grill surface
1 stick of butter, softened and divided in half
6 Kaiser rolls, split in half
6 pieces of Bibb lettuce, washed and dried

Instructions 

Preheat gas grill to medium high heat, if using a charcoal grill, heat charcoal to medium high heat. For blue cheese spread, combine blue cheese, mayonnaise, salt, pepper, and buttermilk in mixing bowl. Stir until well mixed. Cover and refrigerate.To assemble patties, combine ground chuck, grill seasoning, Worcestershire sauce, 2 tablespoons of hot sauce, beaten egg, garlic, salt, pepper, crushed red pepper flakes, and onion in large mixing bowl. Mix with hands until combined, handling mixture as little as possible to avoid compacting mixture. Divide into 6 even portions and shape into patties. Clean grill rack with wire brush and brush hot grill with vegetable oil. Place patties on grill. Cook 3-4 minutes, then flip patties, cooking approximately 5 minutes until medium. Combine 1/2 stick of butter and entire bottle of Louisiana hot sauce in shallow bowl. Whisk together until mixed. Dip entire cooked patty in hot sauce mixture. Spread remaining 1/2 stick of softened butter on split side of Kaiser rolls. Place rolls buttered side down on grill, grill until toasted and golden brown. Spread a generous amount of blue cheese spread on split side of top half of Kaiser roll. Place dipped patty on split side of bottom half of Kaiser roll, top with piece Bibb lettuce. Add top of roll and serve. Makes six burgers.
