Biscuit & Pinot Gravy Burgers

My family loves to eat biscuits and sausage gravy on Sunday mornings. I thought it would be delicious to put a dinner time spin on this classic comfort food.

Ingredients 

Patties
1 pound ground round
1 pound Mexican chorizo sausage removed from casing
1 teaspoon crushed red pepper flakes
1/2 cup sweet onion finely chopped

12 thick slices applewood bacon

Gravy
2 tablespoons flour
4 cups whole milk
1 cup Sutter Home Pinot Grigio
1 teaspoon black pepper
1 1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 teaspoon chopped thyme

6 Boston Bibb lettuce leaves
6 slices beefsteak tomatoes
12 refrigerated biscuits
Vegetable oil for rubbing on grill rack

Instructions 

In a large bowl, combine all ingredients for the patties by hand.  Do not over mix.  Form the mixture into six equal sized patties.  Make a slight indentation in the center of each patty to allow for even thickness while cooking.  Set patties aside until ready to grill.

Heat grill to medium high heat.  Using a rolling pin, roll out each biscuit until five inches in diameter or slightly larger than patties.  Rub grill rack with oil.  Place biscuits on the grill and cook for 2 to 3 minutes per side or until light golden brown.  Remove biscuits from grill and set aside.

Cook the bacon in a fireproof skillet on medium high heat on the grill until browned.  Remove bacon from skillet and place on paper towels to drain.  Set aside.  Do not discard bacon drippings from skillet.

To make the gravy, add flour to skillet with bacon drippings.  Cook the roux until light brown stirring frequently. Add milk and whisk, scraping bits from bottom of skillet.  Once gravy is thick, add wine.  Continue to allow gravy to simmer until thick again stirring frequently.  Add black pepper, salt, nutmeg, and thyme. Stir to combine.  Remove from heat and set aside.

Place patties on oiled grill rack.  Cook 3 to 5 minutes on each side or until desired doneness turning once. Remove from heat.

To assemble burgers, place lettuce on six biscuits.  Position a patty on top of each piece of lettuce.  Pour a generous amount of gravy over each patty.  Top with a slice of tomato, two strips of bacon and another biscuit. Serve immediately.

The flaky biscuit burger buns combined with the spicy beef and chorizo patty, sweet and salty bacon, and rich, creamy gravy is a unique way to enjoy a breakfast favorite. Who needs ketchup when you have gravy!
