Big Kick-Little Man Burger

Well hello to the Judges that are reading my receipe for my Big Kick-little man burger! My Name is Aurora Perez-Olson and I'm a Hairdresser who recently started my own appatizer only catering company called Little Bite's Catering. So I enjoy putting a little extra weight on my fellow stylist by expermenting on them!!! So that's how I finally came to this fully loaded receipe. Full of spicy flavor, but in a slightly smaller package! So it dosn't make them fell as guilty! Well that's what I tell them! So I hope you like what i've whipped up!

Ingredients 

ROASTED RED PEPPER AND LIME MAYO:
3 lrg. Roasted Red Peppers (Jarred)
1 tsp. cracked Black Pepper
1/2 tsp. Cayanne pepper
2 tlbs. Fresh Lime Juice
1 cup Mayo

BURGER PATTIES:
1 pound 80% ground Chuck Beef (2 ounces/ burger)
2 minced Shallots
2 minced cloves of Garlic
1/2 tbls. Onion Powder
1 tsp. Sea Salt
1 tsp. cracked Black Pepper
2 tlbs. worcestershire Sauce
1 tbls. Balsamic Vinegar
1 tbls. Fresh Parsley
2 tbls. Olive Oil
6 slices of Munster Cheese

ONION RINGS:
3 cups Olive Oil
1 Vidalia Onion cut
1/2 inch thick
1 cup White Flour
3/4 cup flat Beer
1 beaten Egg Yolk
2 pinchs of Sea Salt

BUNS:
6 Mini French Roll Burger Buns ( located at local backery or butcher) 2 tbls. melted Butter
1 bunch Fresh washed Arugala

Instructions 

First Prepare cleaned Gas Grill to med. and med-high heat for direct and indirect cooking. Second use food processer to blend roasted red peppers, black pepper, cayanne, lime juice and mayo until smooth (about 1 minute). Put mixture in bowl and store in the fridge until prep. Third, to prepare the Patties, use large mixing bowl. Mix ground chuck, minced shallots and garlic, onion powder, sea salt, black pepper, worces. sauce, balsamic, and fresh parsley until well blended but dont mash to hard. Gingerly form burgers into 2 ounce rounds. Brush both sides of burgers with olive oil. Grill burgers 3-4 mins. per side on med. heat until med.well. When done melt sliced munster on each burger. Fouth, when cheese is melting prepare 3 cups of olive oil to 375* in a kettle. Cut 1 large Viladia onion in 1/2 in slices and soak in a bowl of ice water and let sit. In a seperate bowl combine Flour, egg yolk, beer and 1 pinch of salt until smooth. Dry of onion slices and dip in batter. Fry onions intil brown and crispy. Place on paper towel and sprinkle with remainder salt. Last but not least slice buns and brush with melted butter and lightly toast on grill top. To Assemble burgers place bun on plate and spread top and bottom with Red Pepper Lime mayo, then cheesy burger patty, 1 crispy Onion ring and small amount of washed Arugala and enjoy!
