Big D’s Bring the BBQ Sauce Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

1 cup apple cider vinegar
1/3 cup plus 1 tablespoon ketchup
1 cup light brown sugar
4 tablespoons honey
2 teaspoons butter flavored pancake syrup
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper
2 pounds ground chuck
1 11 ounce can Mexican corn drained and rinsed
8 tablespoons BBQ sauce (from above recipe)
1 teaspoon salt
12 whole wheat Ritz crackers crushed
vegetable oil, for brushing on the grill rack
1 large onion chopped
2 tablespoons butter
2 tablespoons BBQ sauce (from above recipe)
6 slices chipotle cheddar cheese
12 slices BBQ bread or thick sliced bread

 

Instructions

Prepare medium-hot fire in a charcoal grill with a lid.

To make BBQ sauce combine vinegar, ketchup, brown sugar, honey, pancake syrup, salt, black pepper, and red pepper in medium fire-proof saucepan. Place on grill rack and cook about 12-15 minutes, stirring occasionally. Set sauce aside.

To make patties combine ground chuck, Mexican corn, BBQ sauce, salt, and Ritz crushed crackers, mix well and form into 6 patties about the same size as the bread.

Brush grill rack with vegetable oil. Place patties on grill and cook 6 to 8 minutes per side. In the last five minutes of cooking place chopped onion, butter, and 2 tablespoons of BBQ sauce in medium fire-proof saucepan on grill rack. Let onion cook for about 5 minutes stirring occasionally, then set aside. During last minute of grilling patties add one slice of chipotle cheddar cheese to each patty. Allow cheese to melt. Remove patties from grill rack and wrap with foil to keep warm.

Place bread on grill rack 1 to 2 minutes per side or until lightly toasted.

To assemble burgers spread good amount of BBQ sauce on one side of each piece of bread. Place burger on sauce side of one piece of bread and top it with onions and additional BBQ sauce, then top with other piece of bread sauce side down. Serve immediately.
