Bella Bacon Kicker Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

My boyfriend LOVES bacon burgers so I took all his favorite things and made an awesome burger, and he loved trying all my combinations until I came up with the perfect one!

Ingredients:

Basting sauce
½ cup extra virgin olive oil
½ cup Cabernet Sauvignon

Burger
2 lbs of ground chuck
2 tsp sea salt
1 tsp fresh ground pepper
2 Tbls prepared horseradish
2 tsp fresh chopped garlic (Finely chopped)
4 Tbls real bacon bits (found in salad dressing isle)

12 slices of hickory smoked bacon

Vegetable oil to brush the grill
1 large sweet onion
3 large Portabella mushrooms tops
6 slices of Swiss cheese
6 onion rolls
½ cup of extra virgin olive oil for brushing the rolls
6 Tbls prepared horseradish

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

Prepare in a medium size bowl ½ cup extra virgin olive oil ½ cup Cabernet Sauvignon for basting the burgers on both sides while they cook, (you will need a grilling brush)

To make the patties, combine 2 lbs of ground chuck, 2 tsp sea salt, 1 tsp fresh ground pepper, 2 Tbls prepared horseradish, 2 tsp fresh chopped garlic (Finely chopped), 4 Tbls real bacon bits. Divide the mixture into 6 equal portions and form the portions into patties to fit the rolls.

Place bacon in a cast iron pan or fire proof non stick pan and cook on grill for 7 minutes or until done. Place in foil on the outer side of the grill to stay warm.
When the grill is ready, brush the grill rack with vegetable oil
Place prepared burgers on oiled grill, brush with basting sauce. Grill 5 to 7 minutes on each side or until juices run clear.
Slice the onion and portabella mushrooms tops in ½ inch slices, grill next to burgers, brush with basting sauce, flip often, cook for 5 to 7 minutes

During the last few minutes of cooking, brush the rolls with extra virgin olive oil, place the rolls, cut side down, on the outer edges of the rack to toast lightly. During the last minute of cooking, top each patty with the cooked grilled onions, 3 slices of portabella mushroom, and 2 slices of bacon and 1 cheese slice. Close grill until cheese is slightly melted.
To assemble the burgers, spread 1 Tbls of prepared horseradish over the bottom cut sides of the rolls. On each roll bottom place the assembled patty, place top bun on cut in ½ and serve hot!
Cheese may be substitutedfor your favorite cheese!
