Paying homage to the Beehive state. I combined the sweet of the honey and the sting of the pepper.
2 pounds ground sirloin
2 tsp Real Sea Salt
1 cup of honey jalepeno butter
Honey Jalepeno Butter
1 cup honey
1 cup butter
1 small head cabbage, shredded
½ cup mayonnaise
1 tsp mustard
¼ cup honey
6 slices thick-cut bacon
6 slices of Monterey jack cheese
6 high-quality no-seed hamburger buns
Prepare the butter by carefully cleaning and deseeding the jalepenos. Place jalepenos in a food processor and chop. Then add the butter and honey and mix till combined.
Prepare the slaw by combining the mayonnaise, mustard and honey in a large bowl. Add the shredded cabbage and mix together and set aside in cooler.
Prepare the Patties by combining the sirloin, salt and butter gently together in bowl . Form into 6 equal patties.
Preheat your grill to med-high heat.
In a heavy fireproof skillet, cook the bacon and while cooking brush bacon with honey butter till nicely glazed and crisp. Transfer to paper towels.
Add patties to lightly greased grill and cook till medium about 4 minutes on each side. Add Monterey jack cheese to melt and remove from grill.
Spread buns with the honey jalepeno butter and toast on the grill till lighly browned.
To assemble. Place patty on bun then top with slaw and then bacon. Top with bun.
