Beefy Burgers with Spicy Sweet Raspberry Chutney

Ingredients

Sweet and Spicy Raspberry Chutney:
6 ounces fresh raspberries
1/2 cup seedless raspberry jam
1/2 cup thinly sliced sweet onions
1/4 cup dried cherries
2 jalapeno peppers, finely diced
2 tablespoons Colavita raspberry vinegar
1/2 teaspoon mustard seeds
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Patties:
2 pounds ground chuck
2 teaspoons shallot salt, or onion salt
1 teaspoon freshly ground black pepper
18 slices bacon
Vegetable oil, for brushing on grill racks
6 Ciabatta rolls, split
1/2 cup unsalted butter, softened
4 ounces goat cheese
6 slices sweet onion

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the raspberry chutney, combine the raspberries, raspberry jam, onions, dried cherries, jalapeno peppers, raspberry vinegar, mustard seeds, salt and pepper in a small fire-proof saucepan and place on grill rack. Cook the chutney for 10 to 15 minutes, stirring occasionally, until the onions are soft. Remove the pan from the grill and set aside. To make the patties, combine the ground chuck, shallot salt and pepper in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the rolls. Cook the bacon until crisp in a fire-proof griddle or frying pan on the grill rack. Drain on paper towels. Set aside for further use. Brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, 5 to 7 minutes on each side for medium. During the last few minutes of cooking, spread the cut sides of the rolls with butter and place, cut side down, on the outer edges of the rack to toast lightly. To assemble the burgers, spread an equal amount of goat cheese on each roll top. On each roll bottom, place 3 slices bacon, an onion slice, a patty, and an equal portion of raspberry chutney. Add the roll tops and serve. Makes 6 burgers.
