I am a huge fan of Mediterranean cuisine with all the bright colors, fresh ingredients, and tasty sauces. I sought to bring those flavors to a special burger for the Sutter Home Build a Better Burger contest. I wanted it moist and I found a ripe California avocado mashed and blended in kept the burger tender and juicy. Then I experimented with various spice combinations until the perfect balance came together to enhance the flavor of the beef without overpowering it. Then I hosted a summer party to showcase my grilled Beefacado burgers and invited opinions from our guests. It was hugely popular with comments such as “Very moist”, “So good”, “I love the sauce. What’s in it?” “Can I have the recipe?” And one fellow… “Pass the ketchup”. Oh well, some tastes will never change. I hope you try my Beefacado Burger. Ingredients:

Ingredients:

6 large bakery style sandwich buns
1 large red onion thinly sliced
2 medium avocados sliced lengthwise into 6 wedges each (12 wedges total)
1/3 cup Colavita olive oil for brushing buns and grill surface

FOR THE BURGER PATTIES:

1 1/2 pounds ground round or 90% lean ground beef
1 small (ripe for tonight) avocado mashed
1/2 cup finely chopped yellow onions
2 large garlic cloves minced
2 teaspoons Colemans powdered dry mustard
1 1/2 teaspoons salt
1/2 teaspoon fresh ground black pepper
1/4 cup chopped fresh parsley
1/4 teaspoon baking soda
1 egg beaten

For the Tzatziki Sauce

1 1/2 cups strained Greek yogurt
1 large garlic clove finely minced
1/2 teaspoon salt
2 tablespoons fresh dill leaves chopped
2 tablespoons fresh mint leaves chiffonaded

Instructions:

For the burger patties:

Combine all ingredients, mix well and form into 6 patties. Set aside.

For the Tzatziki sauce:

Mix all ingredients in medium bowl, cover and set aside.

Slice buns in half horizontally if they aren’t already sliced. Brush both cut sides with Colavita olive oil. On low to medium heat place buns on the grill, cut side down. Toast until lightly browned, 1 to 2 minutes. Set aside in a warm spot.

Using a grill pan heat the pan on medium to high heat. When the grill pan is heated brush the surface with Colavita olive oil and place burger patties on pan. Grill until first side is well set, 4 minutes, then turn patties over and grill other side until done, 3 to 5 minutes for medium/well done.

On each bun bottom half spoon on a generous spoonful of the Tzatziki sauce. Place burger on top, then 2 large, thin slices of red onion, 2 wedges of avocado, and another generous spoonful of Tzatziki sauce on top. Add the top bun and serve.
