Beef and Chorizo Burger w/ Spicy Jicama Slaw

Latino’s make up a large constituency in the city and their culinary influence can be seen all over.This burger pays homage to the long standing tradition of quality beef with a healthy addition of Latin flavors. Together they showcase the best parts of the history and diversity of Chicago.

Ingredients:

Jicama slaw with spice mango dressing
1 ½ Cups Red Cabbage (SHREDDED)
1 ½ Cups Jicama (JULIENNED)
1 tbs Chopped Cilantro
1 tbs Chopped Flat Leaf Parsley
1 Mango
Juice of 1 Lime
2 tbs Champagne Vinegar
1 tbs honey
1 Habenero pepper (seeded)
¼ tsp salt
¼ tsp fresh ground pepper
¼ cup Olive Oil

Avocado Mayonnaise
2 avocados
4 tbls Mayonnaise

Patties
2 lbs ground chuck
½ lb chorizo
1 Tsp Cumin
1 Tsp Coriander
1 Tsp chili powder
1 Tsp garlic powder
1 Tsp Salt
1 Tsp ground black pepper
½ cup grated Onion
1 Poblano Pepper Diced

Other items
Vegetable oil (for grill)
6 challah Rolls

Instructions:

Jicama Slaw with spicy Mango dressing
Mix shredded cabbage and julienned jicama in a large bowl.
Peel and remove seed of Mango.
Add mango, lime juice, vinegar, habenero, salt and Pepper into blender.
Blend until pureed.
Turn blender to highest speed and slowly drizzle olive oil until well combined.
Pour dressing over cabbage mixture.
Add cilantro and parsley and fold all ingredients together.
Cover and refrigerate until needed.

Avocado Mayo
Scoop Avocado flesh into a small bowl.
Mash avocado then mix in Mayonnaise thoroughly.
Cover and refrigerate until needed.

Patties
Mix together Ground chuck through Poblano pepper in large bowl. separate into 6 equal portions (make patties large enough for the rolls).

Cooking Instructions
Pre-heat grill to Medium High.
Once grill is hot brush grill with vegetable oil.
Cook Patties over Medium high heat for 6 to 8 minutes per side for medium well. Make sure to flip Burgers only once.

Cut Challah rolls in ½ .
Toast cut rolls on grill (sliced side).
Spread 2 tbls Avocado Mayo on Bottom of roll.
Place burger on top of avocado mayo.
Scoop ½ cup of slaw on burger and top with bun.
