Bean Burgitos

Ingredients

Smashed Avacado:
1 avacado peeled and pitted
Juice of 1/2 small lime
Patties:
2 pounds ground Chuck
1 1.25 oz package taco seasoning mix
3/4 cup refried beans straight from the can
Toppings:
6 oz Shredded cheddar cheese
6 tomato slices
6 thin slices of yellow onion
1/2 cup sour cream
6 leaves of iceberg lettuce
6 black olives sliced
1/2 cup salsa
Vegetable oil for brushing grill rack if not well seasoned
6 large hamburger buns split

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make smashed avacado, combine avacado and lime juice in a small bowl. Smash with a fork until almost smooth. Cover bowl and refrigerate until serving. To make the patties, combine the beef and taco seasoning mix in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 12 equal portions, approx 2.5 oz each,and form the portions into patties to fit the bun. Spread refried beans equally, 1/8 cup each, onto 6 of the patties. Making sure to leave space around the edges. Place 1 of each of the remaining patties on top of each of the bean patties. Pinch edges together to seal in the beans. Place patties on the rack, cover and grill 5-7 minutes on each side for medium. To assemble burgitos, place the burger on the bottom portion of the bun, 1 oz of shreeded cheese,1 slice of tomatoe, 1 thin slice of onion, about 1 tablespoon of sour cream, 1 leaf of lettuce, about 1 tablespoon smashed avacado, black olive slices,about 1 tablespoon of salsa, add the bun top and serve. Makes 6 Burgitos
