BBB – Burgers, Blueberries and Blue Cheese

Ingredients

Dressing and topping
2 T Olive Oil 2 T Balsamic vinegar
2 T Maple Syrup
1 Red Onion (sliced thin)
1 Apple (sliced thin)
1 bag Mixed Spring Greens
Patties:
2 ½ lbs Grassfed Ground Chuck
¾ C Fresh or frozen Blueberries (chopped)
1 T Garlic (fresh, minced)
1 T Brown Sugar
2 ½ t Sea Salt
½ t Pepper (fresh, coarse ground)
Vegetable oil to brush on grill
4-6 T Butter
6 lg. Whole Wheat Buns
1 C Blue Cheese (crumbled)

 

Instructions

PREPARATION To prepare the dressing mix olive oil, balsamic vinegar and maple syrup in a plastic bowl with a tight fitting lid that is large enough to hold the lettuce, onion and apple. Sit aside this dressing mixture of oil, vinegar and syrup for later. Thinly slice the onions and apples putting them aside along with the mixed greens until ready to toss in the dressing just before assembly of the burger. To make the patties purchase 2 ½ lbs. freshly ground Grassfed chuck or grind your own. Place beef in a large pan. Coarsely chop blueberries in a food processor and add to the beef. Mince fresh garlic and add to beef. In a small bowl mix together the brown sugar, salt and pepper adding this mixture to the beef. Mix all ingredients thoroughly but handle gently, not over mixing. Form into 6 large patties by hand and place on a pan until the grill is prepared. When the grill is heated brush oil on the grill grate. Place the patties on the grill grate and cover the lid. Grill burgers over medium heat, turning only once and avoiding pressing the burgers until done the way you like them. Plan on 5-7 minutes on each side for medium. Remove patties from the grill and place under aluminum foil to keep warm and moist. Melt butter and brush on buns. Lightly toast buns by placing the cut side down on the grill. While the buns toast put sliced onions, sliced apples and spring greens in the plastic bowl with the dressing and toss until well coated. To assemble the burger, put a burger on bottom half of toasted bun. Remove the greens, onion and apples from dressing and place on top of burger. Top with blue cheese crumbles. Place the other half of the bun on top. Serve immediately
