Avocado, cold beer and my hungry girlfriend

Ingredients:

6 Kaiser rolls, split.

Burger ingredients:
2 pounds ground sirloin
1 pound ground short ribs
2 pieces slab bacon
1 teaspoon Worchestershire sauce
½ teaspoon cumin
½ teaspoon coriander
1 teaspoon salt

Avocado Salsa ingredients
3 Hass Avocados ( Diced)
1 yellow bell pepper (diced)
½ red onion (diced)
2 Roma Tomato (diced)
Lime (juiced)
1 table spoon Balsamic Vinegar (preferable white)
2 table spoons Olive Oil
1 Tablespoon Chopped garlic
2 tablespoons Agave nectar (or honey)
1 teaspoon salt
1 teaspoon pepper

Carna asada ingredients
2 pounds flat iron steak or skirt steak
¼ olive oil
¼ cup chopped cilantro
Juice of 1 lime
1 teaspoon chopped garlic
1 teaspoon kosher salt

Ancho Remoulade ingredients
½ cup mayo
½ cup sour cream
2 dried ancho chilies
1 teaspoon smoked paprika
½ teaspoon cayenne pepper
1 teaspoon kosher salt

Caramelized Anaheim chili and onion ingredients
2 Anaheim chilies
1 yellow
2 table spoons butter
2 tablespoon olive oil
1 teaspoon salt

Potato crisp ingredients
2 Idaho potatoes
2 tablespoon butter
2 tablespoon Olive oil

Instructions:

Preparation
1.) Wash potatoes, shred with a box grater. Soak shredded potatoes in 6 cups of salt water, reserve for later.
2.) Ancho chili mayo, rehydrate chilies in 2 cups warm water for 1 hour or until soft. Blend chilies in blender, stems removed with ½ cup of water. Place puree into mixing bowl and add all other remoulade ingredients. Mix well and reserve for later.
3.) Place 2 # piece of flat iron or skirt steak on cutting, pat dry with paper towel and flatten with meat mallet. Pound meat very thin. Slice meat very thin against the grain and place in mixing bowl. Combine with carna asada ingredients and marinate for 20 minutes. Reserve for later in refrigeration.
4.) Place pan on grill and cook bacon until crispy, dice bacon and reserve half of the fat. Place all ground meat and burger ingredients in mixing bowl with cooled bacon bits and bacon fat. Mix well but don’t over work the meat mixture. After all ingredients are well combined divide into 6 equal parts, flatten each portion on wax paper. Each portion should be about ½ thick and 6×6 inch circle. Place in refrigeration for later.
5.) Place all avocado salsa ingredients in bowl, mix thoroughly and reserve for later.
6.) Burger construction, grill shaved skirt steak for about 15 seconds on each side over high heat on grill. Place aside until cool enough to handle. Divide into 6 equal parts, place equal amounts in center of 6×6 burgers. Mold ground meat around grilled meat, making sure it is sealed all around. Place completed burgers back into refrigeration.
7.) Heat skillet over medium heat on grill, add ingredients for Anaheim and onions sauté. Cook about 12 minutes until color develops and vegetables soften.
8.) For potato cake, place butter and oil in skillet over high heat on grill. Squeeze all water from potatoes, divide into 6 parts. When pan is hot place equal part in pan, cook until golden brown and crispy. Set aside for assembly.
9.) Building the best burger you have eaten. Place burger on hot grill and cook on each side for about 6 minutes each side. While burgers are cooking Take Kaiser roll, on the bottom half spread 1 tablespoon of ancho mayo, place 2 tablespoons of sautéed Anaheim pepper and onion mixture atop of ancho mayo. Place cooked burgers on top of pepper and onion mixture, add potato crisp to top of burger, then avocado salsa. Serve with pinot noir or cold beer.
