Avocado Havarti Burger
2 ripe avocados (preferably Hass)
2 tbsp fresh lime juice
2 1/2 tsp Tabasco Chipotle Pepper Sauce
1/4 cup fresh cilantro, chopped
2 lbs ground chuck
1 large egg
1/2 cup flavored dry bread crumbs
6 oz Havarti cheese, thinly sliced
Oil for brushing grill
6 burger rolls
PREPARING THE AVOCADO DRESSING
Peel and roughly chop the avocados. Place the avocados, lime juice, chiptole pepper suace and cilantro in a food processor and blend until smooth. Set aside.
PREPARING THE BURGERS
Divide the cheese into 6 equal portions.
Mix the beef, egg and bread crumbs and then divide into 12 equal portions.
Form 12 thin beef patties. Place a portion of the cheese on each patty, then place another patty on top and seal the edges to form 6 burgers.
Place burgers on oiled grill over medium to high heat, cover and grill approximately 3 to 4 minutes on each side, depending on degree of doneness preferred.
Place cooked burger on bottom roll, top with avocado dressing, cover with roll top and serve.
The rich flavors of the Havarti cheese and avocado meld nicely with the pepper sauce and cilantro creating a burger that is savory and satisfying.
