Avacado Aoli burgers

I started a catering business and was looking for a way to jazz up a barbecue when my wife gave me a bag of avacados. She does not like whole avacado pices but love them mashed up. Instead of just making gucamole I came up with the aoli. And have been add ingredients since till I came up with the combination that I am submitting today. Thank you

Ingredients 

Avacado Aoli :
4 large ripe Avacado's pitted and skin removed
4 Tablespoon Fresh lime juice
2 Tablespoon minced fresh garlic
2 Tablespoon TABASCO Chipotle pepper sauce
2 egg yolks
1/2 cup extra virgin olive oil
1 Tablespoon salt
1 Tablespoon pepper
Balsamic glaze:
1 cup balsamic vinager
1 Tablespoon molases
Patties:
1 pound ground chuck
1 pound ground sirloin
3 Tblespoon minced cilantro
1 Tablespoon Tabasco chipotle pepper sauce
2 Tblespoon salt
2 Tablespoon pepper Vegetable oil, for brushing on the grill rack
6 (1/4-inch-thick) large red onion slices skewered
8 oz maytag blue cheese
12 pe-cooked apple smoked bacon
6 (4 1/2 inch) soft kaiser rolls,split
6 romaine lettuce leaves
6 (1/4 inch thick) large tomato slices

Instructions 

Prepare a medium hot fire in a charcoal grill with a cover. To make avacado aoil combine the avacado's, lime juice, garlic, Tabasco, and egg yolks in a blender. Mix on high till smooth. Slowly add the oil till all is incorporated, then add salt and pepper. To make balsamic glaze,Combine balsamic and molases in small sauce pot and reduce by half (about 15 to 20 min on medium heat)whisking every 5 minutes. To make patties,combine the chuck, sirloin, cilantro, Tabasco, salt and pepper in a large bowl. Handling the meat as little as possible, mix well. Divide the mixture into 6 equal portions and form into patties to fit rolls. When grill is ready, brush the rack with vegatable oil. Place the patties and the red onions on the rack brush the red onion with the balsamic glaze, cover and cook. turning once, until done to preference, 5 to 7 minutes on each side ( When turning the patties turn the onions and glaze other side). During the final minutes of grilling the patties, add the blue cheese to the patties and cover untill cheese is melted. Remove patties from the grill to a large plate and cover to keep warm. Add the bacon to a nonstick grilling pan coated lightly with oil. Cook until crisp. To assemble the burgers. Spread the Avacado aoli over the cut sides of the rolls. On the bottom roll place the lettuce , a tomatoe slice, patty,red onion slice, and 2 bacon slices. Add top of roll and serve. Makes 6 burgers
