Asian Turkey Burgers with Plum Spicy Relish

Hard to pronounce yet easy to drink, this wine combines lychee fruit and white peach flavors with a hint of spice.

Ingredients:

½ cup hoisin sauce
Juice and grated zest of 1 fresh lime
1 tablespoon grated or minced fresh ginger root
2 pounds ground turkey
1/2 cup oatmeal (quick or old fashioned, uncooked)
1 egg or 2 egg whites, lightly beaten
6 whole wheat burger buns
1 cup fresh ripe plums, seeded and diced
¼ cup diced sweet onion
2 tablespoons Asian sweet chile sauce
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 large butter lettuce leaves

Instructions:

Prepare a medium fire in a charcoal or gas grill.

In a large mixing bowl, whisk together hoisin sauce, lime juice (reserve zest for later use) and ginger root, blending well. Add the ground turkey, oatmeal and egg, blending gently just until well mixed. Moisten clean hands with water and lightly shape into 6 patties, dividing equally. Place on a clean, oiled grid on the heated grill and cook, uncovered, for about 12 to 15 minutes or until cooked through, turning once. About two minutes before the burgers are done, place buns on the outer edges of the grill rack until lightly toasted.

Meanwhile, toss together the plums, onion, sweet chile sauce, salt, pepper and reserved lime zest, blending well. Reserve.

To serve, place a lettuce leaf topped with a cooked burger on the bottom of each bun; top with the relish mixture, add the bun tops and serve. Makes 6 servings.
