Asian Craving Sweet and Sour Chicken Burger

I have come here from Russia 13 years ago.Before then I had never tasted Chinese food. I found that America and Chinese food have deep roots together. Chinese food has found a prominent place in American’s cuisine culture. So I decided to take an extra step and merge the two completely. A burger is an American tradition and part of American heritage. Chinese food is a representative of American diversity. Together they make a delicious combination I called: Asian Craving Sweet and Sour Chicken Burger

Ingredients:

Sweet and sour sauce:
1/2 cup water
1/2 vinegar
1/2 cup brown sugar
2 tbsp ketchup
2 tbsp soy sauce
1 1/2 tsp salt
1/2 tsp garlic salt
1/2 tsp black pepper
2 tbsp cornstarch
1 can of pineapple juice

Chicken patties:
Salt / pepper to taste
1/2 tsp paprika
1/2 tsp red pepper
1 small egg
1/8 cup milk
1/8 cup regular breadcrumbs
2 lbs ground chicken,

1 pineapple (fresh may be substituted with canned slices)
1 big onion sliced
1 bell pepper sliced into strips
1-2 loaves (depending on lengths) of artesian ciabatta bread cut horizontally and then cut into 6 three inch slices.

Instructions:

Sauce: Put 2/3 cup of juice in a bowl. Add water, vinegar, brown sugar, ketchup and soy sauce, stir. On low, warm the skillet then add 1 tbsp olive oil and 1 cup of pineapple juice mixture to the skillet. Cover and simmer gently until mixture reduces a bit. Add cornstarch to the remaining juice mixture while whisking to break any lumps, turn heat on high, whisking constantly until the mixture thickens.

Grill pineapple circle on the grill. Grill or saute onion and bell pepper

Patties:
In a medium mixing bowl combine all of the ingredients except for chicken. Mix and let sit until the breadcrumbs dissolve and the mixture becomes even. About 5 minutes. Add chicken. Mix well. Make the patties and grill on medium setting 3-4 minutes on each side until well done. The last minute of cooking on each side, add the sauce.

Assemble the burger by toasting ciabatta bread slices. Add sauce to both sides, place the pineapple on top of the bottom slice of the bread followed by a chicken patty and then onion and pepper slices, close the deal with the other half of ciabatta bread. Enjoy!
