Asiago Cheese topped Beef Burgers stuffed with Portobello& Shiitake Mushrooms & Gouda Cheese

Yield 6 Burgers total preparation and cooktime 1 hour 15 minutes. Yield 6 man sized burgers. Sutter Home Zinfandel is used in three of the five step procedure. Total quantity is 5 tablespoons plus 1 tsp. Cook time can be adjusted to suit each individual. Serve a lovely glassful of Sutter Home Zinfandel with each burger. Cabernet works great too. Bon appetite!


5 tablespoons plus 1 teaspoon Sutter Home Zinfandel (Divided 2 Tbs. 1 tsp. 3 Tbs)
1 shallot (appr. 1 1/2 oz.) diced finely
4 oz coarsely diced mushrooms (2oz each Portobello & Shiitake)
3 oz finely shredded Gouda Cheese
1/3 cup  mayonnaise
1 1/2 teaspoons Mustard
1 teaspoon ketchup
3 lbs ground chuck 85% lean
2 1/2 teaspoons Meat Magic
1 teaspoon garlic powder
1 teaspoon black pepper
2 1/2 teaspoons Kosher salt
12 Slices Asiago Cheese appr. 1 1/2"W X 3"L X 1/16" thick
6 Kaiser rolls sliced
12 Bibb lettuce leaves
6 1/4" slices firm, ripe tomatoe
Oil for brushing grill rack


MAKE STUFFING; Mix together in a small dish 2 tablespoons Zinfandel, finely diced shallot, 4 oz. coarsley diced mushrooms, set aside. MAKE FINISHING SAUCE: In a small dish mix together 1/3 cup mayonnaise, 1 1/2 teaspoons Grey Poupon Mustard, 1 tsp. ketchup, and 1 teaspoon Sutter Home Zinfandel. MAKE BURGERS: Place 3 lbs ground chuck in a large mixing bowl, pour 3 tablespoons evenly over exposed meat surface. In a small dish mix seasonings; 2 1/2 teaspoons Chef Paul Prudhomme's Meat Magic, 1 teaspoon garlic powder, 1 teaspoon black pepper, 2 1/2 teaspoons Kosher salt. Spinkle seasoning mixture evenly over meat and gently work together until spices are evenly distributed. Divide meat mixture into 12 equal portions(4 oz ea.) flatten into round patties approximately 5 1/2" diameter. In the center of each of 6 patties place 2 tablespoons mushroom stuffing, top with 1 tablespoon shredded Gouda cheese leaving a margin of about 3/4" around the edge. Place a meat pattie on top and seal by pressing the edges together. COOK BURGERS: Brush grill rack with oil. Place burgers on medium high heated grill. Cook 3 minutes then turn burger. Place 2 slices Asiago cheese on top of burger and continue to cook for 2 to 3 minutes or until desired doneness. Remove burgers to a warmed platter and let rest for 2 to 3 minutes before assembling. While burgers are resting, warm buns on grill. ASSEMBLE: Spread finishing sauce sparingly on both sides of warmed buns. On bottom slice of bun layer: lettuce leaf, cooked burger, fresh tomato slice, freshly ground pepper, lettuce leaf,bun top.
