Anti Pasta Burger

This recipe combines typical Italian antipasta ingredients with the American burger for a unique and suprisingly good result.


italian dressing- 3 cups
black olives- approx 12
hot capocollo- 2 ozs
hot calabrese- 2 ozs
cherry tomatoes-approx 20
provolone- 6 slices
italian seasoning- 2 tsp
course salt-1 1/2 tbs
pepper-1 tsp
minced garlic- 1 clove
ground sirloin-1/2 lb
ground delmonico- 1 1/2 lbs
olive oil-to brush on rack
pepper salami- 6 slices
italian bread- 6 bun size pieces, sliced horizontally
butter- 2 tbs melted


To prepare the antipasta ingredients, place the olives, hot capocollo, hot calabrese, cherry tomatos and provolone in a dish and cover with the italian dressing. Allow to marinate for one hour. After 40 minutes, preheat the gas grill to medium high or prepare a medium hot charcoal fire. To make the burger patties, first drain off all of the italian dressing from the antipasta ingredients and blot the ingredients dry with a paper towel to remove some of the dressing. Dice the olives and finely chop the copocollo and the calabrese. Tranfer these ingredients into a large bowl and add the minced garlic, salt, pepper and italian seasoning. To this add the ground sirloin and ground delmonico. Mix well, being cautious not to over handle the meat. Divide the mixture into 6 equal portions and form into patties. When the grill is ready, brush the racks with the olive oil. Place the patties on the rack, cover, and cook, only turning the patties once, just until done to desired preference, approx 4-5 minutes on each side for medium. After the patties have been flipped and are approx 1 minute from being removed, place one slice of the provolone on each burger to melt. Remove the patties from the heat and set aside while preparing the bread and salami. Brush the cut sides of the bread with the butter and place on the grill with the cut side down around the edges of the grill. Lightly toast the bread. While the bread is toasting, quickly grill the salami slices, approx 30 seconds on each side. To assemble, first slice the cherry tomatoes. Also, slice the salami into 1/2 inch strips. On each italian bread bottom, place a patty, several slices of the grilled salami and several slices of the cherry tomatoes. Add the bun tops and serve. Makes six burgers.
