ALLAYA'LLWANTA SOULFUL SOUTHERN BURGER IN A POTATO CHIP CRUSTED SOURDOUGH ROLL

SOUTHERNERS LOVE GRILLED FOOD! THE MIXTURE OF BEEF WITH A TIDBIT OF PORK SAUSAGE AND BACON WITH A SPLASH OF THE THEM GOOD OLD VIDALIA ONIONS AND A HINT OF FIRE FROM THE JALEPENO' PEPPER IS ABSOLUTELY WONDERFUL. THE BEST PART IS THE ADDED FLAVOR AND CRUNCH OF THE POTATO CHIP CRUSTED SOURDOUGH BUNS.

Ingredients 

2 LBS ANGUS GROUND BEEF (75/25)
3/4 LB HOT BULK COUNTRY SAUSAGE
3 TSP. SEASONING SALT
1/2 CUP COLAVITA OLIVE OIL, DIVIDED FOR SAUTE', BRUSHING GRILL & TOASTING ROLLS
6 STRIPS BACON, CUT INTO 1/4 " PIECES
1 1/4 CUP CHOPPED VIDALIA ONION
4 JALEPENO' PEPPERS, SEEDED & CHOPPED
4 CLOVES GARLIC, MINCED
6 SLICES PEPPER JACK CHEESE
6 SOURDOUGH BUNS, SPLIT
1 CUP MAYONNAISE
1 AVOCADO, PEELED,SEEDED,MASHED
2 TABLESPOONS LEMON JUICE
2 9OZ BAGS KETTLE COOKED HONEY DIJON POTATO CHIPS, CRUSHED
6 LEAVES GREEN LEAF LETTUCE
3/4 CUP TOMATO RELISH

Instructions 

PREHEAT GAS GRILL TO MEDIUM HIGH HEAT COMBINE ANGUS GROUND BEEF , HOT BULK COUNTRY SAUSAGE & SEASONING SALT IN A LARGE BOWL. MIX LIGHTLY TRYING NOT TO COMPACT MEAT. SET ASIDE IN A COOL PLACE. PLACE A 10 INCH CAST IRON SKILLET ON GRILL, ADD 2 TABLESPOONS OLIVE OIL TO SKILLET. HEAT FOR ABOUT 10 MINUTES WITH GAS GRILL LID DOWN. ADD BACON, VIDALIA ONIONS, JALEPENO' PEPPERS AND GARLIC. COOK UNTIL BACON IS SLIGHTLY CRISP AND ONIONS ARE TRANSLUCENT. REMOVE FROM HEAT. COMBINE MEAT MIXUTE AND BACON-ONION MIXTURE TOGETHER IN THE LARGE BOWL. MIX GENTLY AS NOT TO COMPACT. FORM INTO 6 UNIFORM PATTIES TO FIT SOURDOUGH BUNS. BRUSH GRILL WITH ABOUT 3 TABLESPOONS OLIVE OIL. PLACE PATTIES ON GRILL. COOK FOR ABOUT 7 MINUTES. DO NOT PRESS BURGERS, BECAUSE THIS WILL RELEASE JUICE AND MAKE THE BURGERS DRY. TURN AND COOK FOR AN ADDITIONAL 7 MINUTES. DURING THE LAST 2 MINUTES OF COOKING ON SECOND SIDE ADD A SLICE OF PEPPER JACK CHEESE TO EACH PATTIE. REMOVE PATTIES TO A PLATTER, COVER WITH FOIL TO KEEP WARM. BRUSH EACH CUT SIDE OF SOURDOUGH BUNS WITH REMAINING OLIVE OIL. PLACE BUN HALVES ON GRILL CUT SIDE DOWN. COOK UNTIL LIGHTLY TOASTED. REMOVE FROM GRILL. COMBINE MAYONNAISE,AVOCADO & LEMON JUICE IN A SMALL BOWL. MIX THOROUGHLY. SPREAD BOTTOMS AND TOPS OF SOURDOUGH BUNS WITH AVOCADO MAYONNAISE, DREDGE EACH HALF INTO POTATO CHIPS. TO ASSEMBLE: PLACE A LEAF OF LETTUCE ON BOTTOM HALF OF EACH BUN, THEN HAMBURGER PATTIE, TOMATO RELISH AND FINISH WITH TOP HALF OF SOURDOUGH BUNS.
