Age Old Cheddar Bacon Burger

Ingredients

2 Tbsp. Mushroom Tapenade
1/2 cup Mayonaise
8 slices precooked bacon
2 lbs. ground round beef
1/2 cup sweet onion, diced
1 1/4 cup 2-year aged white sharp cheddar cheese, cut into small cubes 1/4 inch
1 Tbsp. Merlot
1 Tbsp. Worstershire sauce
1 teas. sea salt
2 teas. black pepper, freshly ground
6 Multi-grain Kaiser rolls
1 Tbsp. olive oil
6 slices red tomato
6-8 romaine lettuce leaves, washed and torn

 

Instructions

1. Combine mushroom tapenade and mayonaise in small bowl, stir and refrigerate until use. 2. Pre-heat grill to medium. Arrange bacon slices on foil sheet and heat on grill until crisped. Cool slightly and chop into small pieces. Place bacon, beef, onions, cheddar cubes, Merlot, Worstershire sauce, salt and pepper in large mixing bowl and combine with care until thoroughly combined. Do not over mix. Divide mixture into 6 equal portions and form six patties. Place patties on plate and refrigerate until ready to grill. Turn grill to medium-hot. Grill patties for 6-8 minutes per side turning only once. 3. While burgers are cooking, slice kaiser rolls and drizzle buns with olive oil on cut side. During last 2 minutes of cooking toast cut side of rolls on grill. 4. To assemble burgers spread mayonaise on cut side of buns. Place 1 tomato slice and 2 pieces of lettuce on bun bottoms. Top lettuce with burgers and top bun. Serves 6.
