5 Cheese Antipasti Burger
This is a burger for "cheese people" with an Italian flare. Most people order a cheeseburger when they order fast food. This burger is loaded with good healthy ingredients that people are now asking for. We are a nation of fat and unhealthy people we need to do something about it and this is a start. You can use any type of cheese that you may like. This is just an idea to give people for different meals a home. The gas crunch has hurt most everyone and people, especially families with children are now cooking more meals at home. By the time you get the family in the car, drive to a "fast food" place, wait in line to get your order, drive all the way back home and you end up with a meal that is right around 1,500 calories per person when you could have had a healthy burger that tasted better and less expensive meal right at home for the same amount of time.
4 Tablespoons extra virgin olive oil
2 Tablespoons fresh basil, chopped
2 Â½ lbs. ground beef
2 Tablespoons grated parmesan cheese
2 Tablespoons grated Romano cheese
1 teaspoon minced garlic
1 teaspoon cilantro chopped
2 eggs beaten slightly
1 Â½ cups Italian Bread crumbs
Salt and pepper to taste
Â½ cup asiago cheese, grated
Â½ cup ricotta cheese
Â½ cup Romano cheese grated
6 Kaiser buns
6 slices whole milk mozzarella cheese
3 cups romaine lettuce (or any lettuce) washed dried and torn into bite size pieces
4 medium tomatoes, thinly slice
2 banana peppers, seeded and chopped
Wipe grill with a vegetable oil and heat grill to medium
Whisk together olive oil and basil in a small mixing bowl, until well blended. Set aside
In a medium size mixing bowl combine all the ingredients for burgers and blend well. Shape into 6 round patties. Grill burgers over medium heat for 10 to 15 minutes or until the meat is no longer pink, turning once. When burgers are almost done place mozzarella cheese on burgers and set the Kaiser buns, flat side down on grill until golden brown.
Meanwhile prepare the cheese mixture in a medium size mixing bowl, gently combine the cheeses and set aside.
Set Kaiser buns on 6 plates and brush the olive oil and basil mixture evenly on flat sides of Kaiser buns; divide salad greens, tomato slices and banana peppers and place on buns. Place patties on buns, cut horizontally and remove the top part of the burger. Spoon cheese mixture on each burger, put the other half of burger back on and spoon more cheese on and close sandwich. Salt and ground pepper to taste.
You can substitute the beef for 2 Â½ lbs. ground chicken breast. Either way it's a great burger.
