Wine Varietal: White Zinfandel
This burger is a representative of the state of Florida because it stems from the major citrus industry, while bringing in local latin flavors.
2 lbs. ground beef
1 & 1/2 valencia oranges (segmented and diced)
Zest from 1 & 1/2 valencia oranges
Zest of 2 key limes
1 key lime (segmented and diced)
1/2 cup plain bread crumbs
1 medium sized jalepeno (seeded and finely diced)
6 tablespoons fresh cilantro (finely chopped)
3 tablespoons mayo
Juice of 1 key lime
Vegetable oil for brushing on grill
6 kaiser rolls with sesame seeds
1/2 tablespoons pineapple juice
6 canned pineapple slices
6 hamburger buns
Preheat grill to medium high.
To make burger patties: combine beef, orange and lime pieces and zest, bread crumbs, jalepeno, and cilantro. Divide mixture into 6 equal portions and form into patties. Pack each well, and place a slight indention in the top of each to prevent splitting. Sprinkle each patty with salt and pepper.
When the grill is ready, brush with oil. Place patties on rack, cover and cook, turning once until cooked to liking. (Example: 5 to 7 minutes on each side for medium)
While the patties are cooking: mix mayo and lime juice. Wisk together until well blended. Set aside.
During the last minute of patty cook time, place 12 bun halves on top rack of grill until lightly toasted.
To assemble the patties: spread a bit of mayo on each bun half. Place a patty on each bottom bun half. Top with other bun half and serve.
