Wine Varietal: Merlot
The compliments received and the many requests for how the mushroom sauce and ground beef it is made
3 tablespoons hoisin garlic sauce
3 tablespoons Yoshida sauce
2 pounds ground beef
16 oz.Fresh mushrooms
1 teaspoon olive oil
6 tablespoons salted butter
1/2 cup white wine
4 tablespoons salted butter
2 fresh cloves of garlic
4 tablespoons of flour
1/3 cup condensed chicken broth
1/3 cup heavy cream
3 oz shredded parmesan cheese
6 king’s Hawaiian Sandwich Buns
2 tablespoons melted butter
6 palm-size leaves of romaine lettuce
6 slices of tomatoes (sliced 1/8th inch thick)
Preheat grill to medium heat.
To prepare the patties combine the hoisin sauce with the Yoshida sauce and mix into the ground beef. Form 6 equal size patties Set aside and cover loosely with foil.
Wipe mushrooms with a slightly damp paper towel. Cut off stems and slice mushrooms extremely thin. In heat proof sauce pan put in one teaspoon of olive oil and 6 tablespoons of butter. Place on medium heat and when butter is melted add the sliced mushrooms.Toss gently until mushrooms become tender and dark, about 9 minutes. Add the 1/2 cup wine to mushrooms and let bubble until wine is gone. Take off heat place in bowl and cover with foil. Set a side as favor deepens.
For the sauce, peel the 2 heads of garlic and slice and dice up. Melt butter on medium heat in heat proof saucepan and sautee garlic for 3 or 4 minutes until tender.Stirring constantly now add flour and alternately small amounts of chicken broth and heavy cream stirring continuously until sauce is adequately thickened. Take pan off heat and top with parmesan cheese. Cover & Set aside.
Melt 2 tablespoons of butter and brush cut sides of buns with melted butter. Place buns on outer edges of rack to toast lightly. Remove and place on platter.
Turn grill up to medium high and grill patties to desired doneness( flipping when pink liquid rises to topside.) Turn off grill.
Place on bottom slice of bun : a lettuce leaf, a slice of tomato, the juicy beef patty, the thickened sauce (about 1/4 cup), 2 tablespoons of mushrooms, and the top toasted bun half and serve.
Makes 6 burgers.
