Jalapeno Bacon Burgers with Spicy Guacamole Spread

My fiance loves the taste of jalapenos in everything and bacon makes everything better!He likes a fiery kicked up taste and these burgers don’t dissapoint!


1/4 cup Sutter Home Moscato Wine
1 egg
2 pounds ground chuck hamburger
1 teaspoon celery salt
1 cup finely chopped onion
2 jalapenos seeded and finely chopped
1 teaspoon cayenne pepper
1 teaspoon cajun seasoning
9 tablespoons extra virgin olive oil
6 slices bacon
6 slices pepper jack cheese
6 potato rolls
6 lettuce leaves
6 large or 12 medium slices tomatoes
Spicy Guacamole Spread
6 tablespoons jalapeno jelly
1 avocado mashed
1 teaspoon garlic salt


Preheat grill to medium-high heat. While preheating in a large bowl combine wine, egg, hamburger, celery salt, onion, jalapenos, cayenne pepper, and cajun seasoning, and mix well with a fork or your hands, handling the meat as little as possible. Form into 6 patties and set aside. When the patties are formed brush the grill with 3 tablespoons olive oil and save the rest for later use. Place the bacon on the grill rack and cook about 6-8 minutes on each side until crisp. Remove bacon to paper towels to drain until ready to assemble burgers. While bacon cooking place patties on grill and cook 5-7 minutes on each side turning only once if possible. To make the spread, while burgers cooking in a small bowl mix jelly and avocado along with garlic salt with a fork until well mixed and cover and set aside until ready to assemble burgers. When burgers are almost done place pepper jack cheese over top and cook and additional 1-2 minutes until cheese melted. Place rolls on a serving platter and brush remaining olive oil on each side. Place rolls on grill rack and toast lightly for 1-2 minutes. Remove and place back on serving platter. Spoon 1 tablespoon spread on each side of roll and then place burger on bottom roll. Cut bacon in half and place 2 halves on top of each burger. Top with lettuce and tomatoes and then top roll. Serve immediately. Yields 6 servings.
