Salmon fillet with lime and white wine

This is the meal Colin’s preparing towards the end of Human Remains, when he is sadly very rudely interrupted. It’s his favorite recipe and he is particularly disappointed to have to leave it behind.


Olive Oil

2 salmon fillets
Zest and juice of a lime, plus a slice of lime for garnish
White wine
Salt and pepper

Fresh Parsley


Make a parcel out of tinfoil, greasing lightly with a few drops of olive oil, and put the salmon inside. Add the zest and juice of the lime, a splash of white wine, and salt and pepper to taste.  Seal the parcel well, leaving some space for steam to circulate within it. Refrigerate for 1 or 2 hours to allow the flavors to marinate. Steam for 4 to 5 minutes or bake for 10 to 15 minutes in a preheated oven ( 200 deg C/390 deg F). Garnish with freshly chopped parsley and a slice of lime.

Serve with Riesling and wild rice, and steamed green vegetables – delicious!
