Gam's Homemade Potato Soup

This recipe has been handed down from my grandmother – who gained the nickname Gams when I was a toddler – to my mother and finally to me. As far as I know, this is the first time it has been written down. Enjoy.

Yields 6 servings

5 large potatoes, peeled and diced
1 small onion, peeled and diced
1 oz. cream cheese
1/2 tsp. minced garlic
2-1/2 - 3 cups whole milk 
4 Tablespoons butter
salt and pepper to taste

2 green onions including tops, chopped and divided
1/4 cup bacon bits, divided
5 oz. shredded Cheddar cheese, divided


In a large pot, cover the potatoes and small onion with water. Add a healthy pinch of salt, cover and boil until potatoes are well cooked. Drain the water from potatoes and onions. Add cream cheese, garlic and butter. Mash with potato masher or use a hand mixer until butter and cream cheese are melted and ingredients are well blended. You’re looking for a relatively smooth consistency. Add whole milk, salt and pepper to taste. Place on low heat until mixture and milk are well blended and hot. Pour into serving bowls and top with green onions, bacon and shredded cheese.  


Don’t be afraid to mix take-out with home-cooked items, and when guests offer to bring something, take them up on it.
