Wine Varietal: Chardonnay
1 large red onion
1/4 c olive oil
1.5 # ground chuck
1 Hass Avocado
2 roma tomatos
1/4 c fresh basil leaves
8 oz mozzerella cheese
1/4 c balsamic vinegar
2 – french bread 12″
1/2 tsp salt
1 tsp pepper
-Caramelize onion-thinnly slice red onion, add 2 tbsp olive oil to pan on medium heat, cook onion for 10 minutes stirring occasionally, reduce heat medium/low and cook for 10 additional minutes.
-Peel and mash avocado
– mix ground chuck, avocado, 1/2 caramelized onion, 1/2 tsp salt and 1 tsp pepper, form 6- 4/5 oz patties
-Caprise salad topping- cube roma tomato and chop basil leaves, toss with remaining olive oil and balsamic vinegar.
-slice mozzerella cheese into 6 pieces
-cook burger on grill approximately 2/3 minutes per side fllip once
-assemble burger- cut french bread into 6 pieces and slice, brush top and bottom with balsamic/olive oil mixture from caprise salad.
– layering burger-burger, remaining caramelized onion(divided 6 portions) mozzerella cheese, top with caprise salad
