This is a wonderful burger with a surprise filling. The black bean relish can be "heated up" if you like it hotter by adding more of the tomato/green chilies.
I live in East Texas and East Texans love to grill and love the Cajun influence of being so close to Louisiana.
When I lived in the south, I enjoyed a Cajun Thanksgiving with Turdunken as the main course. Needless to say, I was intrigued with turkey, stuffed wtih a chicken and duck.
