Pesto Sauce Recipe by Inspiring Fitness and Nutrition Expert, Stacey Griffith

Pesto Sauce from “Two Turns From Zero” by expert motivator, fitness virtuoso, and self-empowerment guru Stacey Griffith. Stacey Griffith is a senior master instructor at SoulCycle who has been leading sold-out indoor cycling classes in New York and Los Angeles since 1996.

  • 2 cups fresh spinach
  • 2 cups fresh basil
  • ¼ cup pine nuts
  • ¼ cup walnuts
  • 3 tablespoons extra-virgin olive oil
  • 2 or 3 garlic cloves
  • 1 to 2 tablespoons grated Parmesan cheese or nutritional yeast, plus more for serving
  • Salt and black pepper
  • Juice of 1 lemon
  • 8 ounces dried fusilli or capellini

In a blender, combine the spinach, basil, pine nuts, walnuts, olive oil, garlic, and cheese or nutritional yeast. Blend until well mixed. Stir in salt, pepper, and lemon juice to taste. For thinner pesto, add a bit of water.

Cook the pasta until al dente. Drain.

Pour the pesto over the hot pasta and stir until well mixed. Top with additional cheese or nutritional yeast, if desired.
