A savory custard baked in a pie crust originating in the French-German province of Loraine, quiche is an ideal book club dish, typically serving 8-10 people. What’s more, the filling possibilities are practically endless and can be customized to suit your club’s tastes.

Quiche Making Tips:
Blend custard ingredient more than you might think-until they are light, pale lemon in color and foamy. The bubbles help prevent the filling ingredients from sinking to the bottom.
Prebake crust well and add custard and precooked filling ingredients while still hot. This helps the custard thicken quickly.
The trickiest part to making quiche is the crust. Use a pre-baked pie shell to minimize most of the fuss.
Precook filling ingredients and pat dry well before using. This will prevent the quiche from becoming watery.
