Gorgonzola stuffed celery

Ingredients:

-2 bunches celery
-8 ounces Gorgonzola cheese, crumbled
- 8 ounces cream cheese, at room temperature
- 2 teaspoons white wine vinegar
-High-quality brandy
-Salt
-Paprika

Directions:

Wash and trim the celery and cut stalks crosswise into pieces about 4 inches long.
In a bowl of a stand mixer, combine the cheeses and beat at medium speed with a flat beater until well blended. Add the vinegar and brandy and beat until spreadable.
Spoon the cheese mixture into the celery and dust lightly with paprika for garnish
