Let it Burn Turkey Chili
Turkey Chili:
1lb of ground turkey meat
1 medium turkey breast, cut into bit-size cubes
2 yellow onions, chopped
1 green bell pepper, diced
2 cloves of garlic, crushed
1 teaspoon of dried thyme
1 teaspoon of dried oregano
1 teaspoon of dried ground cumin
2 teaspoons of chili powder
2 teaspoons of paprika (Sweet Hungarian preferably)
1/2 teaspoon of dried red chili flakes (or to taste)
1/2 teaspoon of cayenne pepper
1 teaspoon of white pepper
1 teaspoon of cracked black pepper
1 pound (large can) of whole tomatoes, coarsely chopped
1 cup of chicken stock
Salt to taste
4 tablespoons of vegetable oil
Garnish:
Sweet red onion, diced
Fresh cilantro, coarsely chopped
Tortilla chips, coarsely broken
Sour cream (optional)
Heat vegetable oil in a large pot over medium heat. Add onions, bell pepper and garlic and cook until vegetables soften, about 5 minutes. Add the turkey breast pieces, allow to cook for approximately 3 minutes followed by the ground turkey. Continue cooking for about 8 minutes or until light brown. Add thyme, oregano, cumin, chili powder, paprika, chili flakes and remaining peppers. Add tomatoes and their juice. Stir in stock and cook over medium heat for 20 minutes. Ladle generously in a large bowl and top with garnishes
